Mushroom Ritz

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 (16 ounce) package mushrooms
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 1/4 cup green pepper, finely chopped
  • 1 clove garlic, minced
  • 2 ounces pepperoni, finely chopped
  • 1/4 teaspoon dried oregano
  • 12 round buttery crackers, crushed
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons dried parsley
  • 1/2 teaspoon seasoning salt
  • 1/3 cup wine or 1/3 cup chicken broth

Recipe

  • 1 remove and chop mushroom stems; set aside mushroom caps.
  • 2 melt butter in a large saucepan; add mushroom stems, onion, green pepper, garlic, pepperoni and oregano.
  • 3 sauté until tender.
  • 4 add cracker crumbs, cheese, parsley and salt; stir well.
  • 5 stuff mushroom caps with mixture; arrange in a 13"x9" baking dish.
  • 6 sprinkle with wine or chicken broth.
  • 7 bake at 325 degrees for 25 minutes.
