Ingredients

- 1 (16 ounce) package mushrooms
- 2 tablespoons butter
- 1 onion, finely chopped
- 1/4 cup green pepper, finely chopped
- 1 clove garlic, minced
- 2 ounces pepperoni, finely chopped
- 1/4 teaspoon dried oregano
- 12 round buttery crackers, crushed
- 1/4 cup grated parmesan cheese
- 2 tablespoons dried parsley
- 1/2 teaspoon seasoning salt
- 1/3 cup wine or 1/3 cup chicken broth
Recipe
- 1 remove and chop mushroom stems; set aside mushroom caps.
- 2 melt butter in a large saucepan; add mushroom stems, onion, green pepper, garlic, pepperoni and oregano.
- 3 sauté until tender.
- 4 add cracker crumbs, cheese, parsley and salt; stir well.
- 5 stuff mushroom caps with mixture; arrange in a 13"x9" baking dish.
- 6 sprinkle with wine or chicken broth.
- 7 bake at 325 degrees for 25 minutes.
