Peach Butter With Cardamom

Ingredients
- 2 1/2 cups ripe peaches, peeled,pitted and sliced (about 1 pound)
- 2 tablespoons lemon juice
- 1/2 cup sugar
- 1/4 teaspoon cardamom
- 1/8 teaspoon freshly grated nutmeg or 1/8 teaspoon ground nutmeg
Recipe
- 1 cook all ingredients in a heavy saucepan over medium heat until peach butter thickens, about 20 minutes.
- 2 store, tightly covered, in refrigerator.
- 3 microwave instructions: cook all ingredients on high, uncovered for 10 minutes or until peach butter thickens.
- 4 to remove peach skins: dip peaches in boiling water and then in cold water; peel.
