Roast Turkey Pinwheel Logs

Ingredients

  • Servings: 4
  • 4 slices whole wheat bread (10 by 4 inches, crusts removed)
  • 6 ounces thinly sliced deli turkey
  • 4 teaspoons dijon mustard
  • 12 gherkins, sliced in half lengthwise

Recipe

  • 1 place a sheet of plastic wrap on work surface. working with one bread slice at a time, set on top of plastic.
  • 2 arrange turkey slices on top. spread mustard in a strip along long side of bread closest to you and arrange 6 gherkin halves on top of mustard.
  • 3 starting with long edge closest to you, tightly roll up bread and filling jelly-roll style, without squeezing too hard.
  • 4 wrap tightly in plastic wrap. repeat with remaining bread.
  • 5 refrigerate at least 30 minutes to firm.
  • 6 using a sharp knife, trim off ends of roll and then cut each into 6 slices.
