Curried Stuffed Eggs

Ingredients

- 6 hard-boiled eggs, shelled
- 2 teaspoons fresh lemon juice
- 1 teaspoon curry powder
- 1 teaspoon minced green onion
- 1 teaspoon soy sauce
- 1 tablespoon mayonnaise
Recipe
- 1 halve eggs lengthwise and remove yolks.
- 2 put yolks through a sieve or mash with a fork.
- 3 add the lemon juice, curry, onion and soy sauce to the yolks.
- 4 moisten mixture with the mayonnaise.
- 5 fill the hollowed egg whites with the mixture.
- 6 note: a small dash of fresh ground red pepper will liven up the party if you have a dull curry.
