Golden Onion Dip

Ingredients

- 2 large sweet onions
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1 (8 ounce) package cream cheese
- 1 cup mayonnaise
- 1/2 cup chopped toasted pistachios
Recipe
- 1 chop the onions. leave the cream cheese out to soften while preparing the onions.
- 2 melt the butter in a large nonstick skillet. add the onions and cook over medium-high heat, stirring constantly, until tender.
- 3 add chicken broth and bring to a boil. cook over medium-high heat for 20-25 minutes, stirring often, until onion is golden. remove from heat and let cool.
- 4 beat the cream cheese until creamy. add mayo and beat until smooth. stir in the onion mixture and the pistachios.
- 5 cover and chill until ready to serve, at least 2 hours. serve with assorted fresh veggies or melba rounds.
