Fresh Fruit Orange Dip

Ingredients
- 2 egg yolks
- 1/4 cup sugar
- 1/8 teaspoon salt
- 2 tablespoons orange juice concentrate, thawed and undiluted
- 1 teaspoon grated orange rind
- 1 1/3 cups whipping cream
Recipe
- 1 combine egg yolks, sugar, and salt in top of double boiler.
- 2 water must be boiling.
- 3 you must watch mixture and stir constantly.
- 4 turn down heat and cook until it reaches 165 degrees.
- 5 the mixture will be thick and light in color.
- 6 remove pan from stove and stir in orange juice and orange rind.
- 7 cool.
- 8 beat whipping cream until soft peaks form.
- 9 fold in cooled orange mixture into whipping cream.
- 10 cover and chill at least 2 hours.
- 11 serve with your favorite fresh fruit.
