Roast Asparagus Wrapped In Pancetta With Lemon Mayonaise

Ingredients

  • Servings: 4
  • 7 ounces asparagus (about 10-12 spears )
  • pancetta (16 thin slices )
  • 1/4 cup olive oil
  • fresh ground black pepper
  • 1/2 cup mayonnaise
  • 1 lemon, juice and grated rind of
  • 2 tablespoons fresh dill (finely chopped )

Recipe

  • 1 heat the oven to 375 degrees.
  • 2 prepare the lemon mayonaise in a small serving bowl by mixing together the mayonaise , lemon juice and rind , and the chopped dill. cover and place in the fridge.
  • 3 wrap each asparagus spear in a slice of pancetta. arrange on a baking sheet and drizzle the olive oil over them. sprinkle a little black pepper on top and roast in the oven for 6 to 7 minutes ( i cook mine about 12 minutes ) until tender.
  • 4 serve warm with the bowl of lemon mayonaise.
