Potato Skins

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 5 medium potatoes, unpeeled
  • 2 tablespoons olive oil
  • 1/2 cup sour cream

Recipe

  • 1 preheat oven to hot.
  • 2 scrub potatoes well; brush with half of the oil. place potatoes on oven tray; bake, uncovered, in hot oven about 50 minutes or until tender. cool.
  • 3 cut each potato into six wedges; carefully remove flesh, leaving skins intact. place potato skins, skin-side down, on wire rack over oven tray; brush with remaining oil. roast, uncovered, in hot oven about 20 minutes or until crisp; serve with sour cream.
