Garden Gazpacho Dip

Ingredients

  • Servings: 4
  • 1 cucumber, peeled, seeded, diced
  • 1/2 yellow bell pepper, seeded diced
  • 1 1/2 cups fresh parsley, minced
  • 1 small red onion, diced
  • 1 garlic clove, minced
  • 1 tablespoon lime juice
  • 1 (430 ml) jar tostitos salsa

Recipe

  • 1 combine all ingredients excluding parsley in a bowl, chil the mixture in the refrigerator for 15 minutes, sprinkle with parsley then serve with tortilla chips.
