Roasted Red Pepper-chipotle Hummus

Ingredients

- 1 (15 ounce) garbanzo beans, rinsed and drained
- 1/2 cup bottled roasted sweet red pepper
- 1/3 cup tahini or 1/3 cup creamy peanut butter
- 3 tablespoons lemon juice
- 4 garlic cloves
- 1/2-1 chipotle chile in adobo
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
- 1/8 teaspoon paprika
- 1 tablespoon snipped fresh cilantro or 1 tablespoon parsley
Recipe
- 1 in a food processor or blender, combine chickpeas, red sweet pepper, tahini, lemon juice, garlic, chipotle pepper in adobo sauce, cumin, salt, and black pepper. cover and process or blend until smooth.
- 2 to serve, spoon into a serving bowl. sprinkle dip with paprika and cilantro.
- 3 cover and chill up to 3 days. bring to room temperature before serving.
