Roasted Red Pepper-chipotle Hummus

Ingredients

  • Servings: 6
  • 1 (15 ounce) garbanzo beans, rinsed and drained
  • 1/2 cup bottled roasted sweet red pepper
  • 1/3 cup tahini or 1/3 cup creamy peanut butter
  • 3 tablespoons lemon juice
  • 4 garlic cloves
  • 1/2-1 chipotle chile in adobo
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper
  • 1/8 teaspoon paprika
  • 1 tablespoon snipped fresh cilantro or 1 tablespoon parsley

Recipe

  • 1 in a food processor or blender, combine chickpeas, red sweet pepper, tahini, lemon juice, garlic, chipotle pepper in adobo sauce, cumin, salt, and black pepper. cover and process or blend until smooth.
  • 2 to serve, spoon into a serving bowl. sprinkle dip with paprika and cilantro.
  • 3 cover and chill up to 3 days. bring to room temperature before serving.
