Potato Latkes For Hanukkah

- 5 large potatoes, peeled and shredded
- 1 medium onion, finely chopped
- 3 eggs, beaten
- 1 tablespoon fresh lemon juice
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2-3/4 cup vegetable oil, for frying
- sour cream and applesauce, for serving
Recipe
- 1 place potatos in a clean kitchen towel, gather corners together to form a sack and wring out as much liquid as you can.
- 2 heat 1/2 cup oil in a large skillet. transfer prepared potatos to a large mixing bowl stir in onion, lemon juice, eggs, flour, salt, and pepper.
- 3 drop batter by tablespoonfuls into hot oil and flatten with a spatula. cook for about 5 minutes, or until golden brown, turn over and cook other side for about 3 minutes, or until golden brown. drain on paper towels. repeat process adding more oil if needed until all of the batter is used up. serve latkes hot with sour cream and applesauce.
