Ila's Pineapple Stuffed Date Sumaki

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 15 pitted dates
  • 16 ounces pineapple chunks, drained (reserve juice)
  • 15 slices bacon, cut in half (precooked or microwave)
  • 1/2 cup tomato sauce
  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 garlic cloves, minced

Recipe

  • 1 preheat oven to 400 degrees. cut each date in half crosswise, leaving a hole in the center. lay a pineapple chuck into the center of each half slice of date and wrap with a half of a bacon slice. sticking with a wooden tooth pick to hold together. place in a 13 x 9 inch baking dish and cook for 30 minutes; drain excess fat.
  • 2 combine remaining ingredients in a small bowl and pour over rumaki; tossing lightly to coat with sauce. bake for 30 minutes more, stirring occasionally. pour rumaki and sauce into a shallo decorative bowl. serve hot.
