beet salad on a stick

Ingredients

  • Servings: 8
  • 3 tablespoons chopped walnuts
  • 8 ounces chilled goat cheese, rolled into 8 balls
  • 8 bamboo toothpicks
  • 8 (2 ounce) roasted beet wedges
  • 24 fresh spinach leaves
  • 3 tablespoons honey

Recipe

    Preparation Time: 15 mins Ready Time: 15 mins

  • pour walnuts into a shallow bowl. roll goat cheese balls in walnuts to coat completely.
  • thread 1 coated goat cheese ball a toothpick; add beet wedge and 4 baby spinach leaves to the toothpick. repeat with remaining toothpicks, goat cheese, beets, and spinach. drizzle each skewer with honey.
