beet salad on a stick
Ingredients

-  3 tablespoons chopped walnuts 
-  8 ounces chilled goat cheese, rolled into 8 balls 
-  8 bamboo toothpicks 
-  8 (2 ounce) roasted beet wedges 
-  24 fresh spinach leaves 
-  3 tablespoons honey

- pour walnuts into a shallow bowl. roll goat cheese balls in walnuts to coat completely. 
- thread 1 coated goat cheese ball a toothpick; add beet wedge and 4 baby spinach leaves to the toothpick. repeat with remaining toothpicks, goat cheese, beets, and spinach. drizzle each skewer with honey.
