Mini Frittatas With Tofu, Mushrooms And Asparagus

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 4 eggs, lightly beaten (i use vegetarian fed eggs)
  • 300 g firm tofu, crumbled down
  • 1/2 red onion
  • 4 slices bacon, sliced thinly (i use sanitarium vegetarian rashers)
  • 2 garlic cloves, sliced thinly
  • 1 cup mushroom, sliced thinly
  • 2 tomatoes, ripe diced
  • 7 asparagus, chopped thin
  • 2 tablespoons sambal oelek (i used chilli sauce with sugar)
  • 2 tablespoons grana padano, grated
  • 1 pinch salt

Recipe

  • 1 preheat oven to 180 degrees celsius.
  • 2 saute onions and garlic until caramelized.
  • 3 add bacon until cooked.
  • 4 add asparagus and cook till a little soft.
  • 5 add mushrooms and tomatos at same time.
  • 6 mix chilli sauce in and cook all vegetables are soft.
  • 7 place eggs and tofu together and mix together.
  • 8 add salt and vegetable mix, stir.
  • 9 place in muffin pan that has been greased or lined with paper.
  • 10 place in oven for 15 minutes.
  • 11 turn heat up to 220 degrees celsius and leave in for another 10 minutes or until mixture is firm.

Skordalia (potato And Garlic Dip)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 750 g floury potatoes
  • 4 -6 garlic cloves
  • 1 tablespoon lemon juice
  • 100 g ground almonds
  • 175 g extra virgin olive oil
  • 1 egg
  • sea salt, to taste
  • fresh ground black pepper, to taste

Recipe

  • 1 boil the potatoes in their skins until cooked - about 30 minutes. what you are aiming for in this recipe is starchy mashed potato. as soon as the potatoes are cool enough to handle, peel them and either mash them or put them through a potato ricer.
  • 2 peel the garlic cloves and pound them in a pestle with the lemon juice or use a hand-blender for this step.
  • 3 mix the potato, garlic and ground almonds together thoroughly in a bowl, and then beat in the olive oil gradually with a wooden spoon.
  • 4 beat in the whole egg and season with salt and pepper.
  • 5 note: remember that the taste of the garlic will strengthen with time, so keep that in mind - and when the dish is to be served - when deciding on the amount of garlic you include in this recipe.

Kale Crispies

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1 bunch fresh kale
  • 1 tablespoon olive oil
  • sea salt

Recipe

  • 1 wash and dry kale and rip into 2" pieces, discarding ribs.
  • 2 place kale pieces in a bowl and toss with the olive (or vegetable) oil.
  • 3 place a cookie cooling rack on top of a cookie sheet, and lay 1 layer of the oiled kale on the cooling rack.
  • 4 salt lightly with sea salt.
  • 5 place in 225 degree oven for 20-25 min or until crisp yet bright green.
  • 6 remove from oven , cool a minute or 2, and crunch away!

Peppery Popcorn

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon pepper
  • 1/8 teaspoon cayenne pepper
  • 4 quarts unseasoned popped popcorn (about 3/4 cup unpopped)
  • 3 tablespoons melted butter

Recipe

  • 1 combine first 5 ingredients in small bowl.
  • 2 place popcorn in large bowl; drizzle butter over popcorn, tossing until evenly coated.
  • 3 sprinkle 1/3 of seasoning over popcorn and combine well.
  • 4 repeat 2 more times until popcorn is well coated.
  • 5 (can be prepared 1 hour ahead. store at room temperature.).

Hoisin Prawn Mini Pizzas

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 1 lb basic pizza dough (see related recipe)
  • 2 tablespoons hoisin sauce
  • 80 g snow peas, trimmed, thinly sliced
  • 1 kg medium green prawns, peeled, deveined (24 prawns)
  • 2/3 cup grated reduced-fat mozzarella cheese

Recipe

  • 1 make pizza dough. roll dough out until 5mm thick. using a 10cm cutter, cut 12 rounds from dough (you may need to re-roll dough). place bases on a greased baking tray. preheat oven to 240°c/220°c fan-forced.
  • 2 spread hoisin sauce over rounds. top with snow peas, prawns and cheese. bake for 15 minutes or until prawns are cooked and cheese has melted. serve.

Sauteed Cherry Tomatoes With Pine Nuts

Total Time: 16 mins Preparation Time: 10 mins Cook Time: 6 mins

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 1 large garlic clove, minced
  • 1 (12 ounce) basket cherry tomatoes, stemmed
  • 1/4 cup toasted pine nuts
  • 2 tablespoons fresh basil, chopped or 2 teaspoons dried crumbled basil
  • 3/4 tablespoon red wine vinegar
  • 3/4 tablespoon balsamic vinegar
  • 1 pinch salt
  • 1 dash pepper
  • fresh basil sprig (optional)

Recipe

  • 1 heat oil in large skillet over medium heat.
  • 2 add garlic and tomatoes and saute until tomatoes are just heated through, stirring occasionally about 5 minutes.
  • 3 add toasted pine nuts, basil and vinegars, stir 1 minute.
  • 4 season with salt and pepper.
  • 5 transfer tomato mixture to shallow platter.
  • 6 garnish with fresh basil sprig and serve.

Raw Beets With Cumin Seeds

Ingredients

  • Servings: 4
  • 6 small raw beets, trimmed, peeled and thinly sliced
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons mild olive oil
  • 1/4 teaspoon cumin seed
  • salt & freshly ground black pepper

Recipe

  • 1 toss beets with vinegar, olive oil, cumin seeds, and salt and pepper to taste in a bowl. chill well.
