Refried Beans Without The Refry

Ingredients

  • Servings: 15
  • 1 onion, peeled and halved
  • 3 cups dry pinto beans, rinsed
  • 1/2 fresh jalapeno pepper, seeded and chopped
  • 2 tablespoons minced garlic
  • 5 teaspoons salt
  • 1 3/4 teaspoons fresh ground black pepper
  • 1/8 teaspoon ground cumin, optional
  • 9 cups water

    Ready Time: 8 hrs 15 mins

  • place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. pour in the water and stir to combine. cook on high for 8 hours, adding more water as needed. note: if more than 1 cup of water has evaporated during cooking, then the temperature is too high.
  • once the beans have cooked, strain them, and reserve the liquid. mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency.

Simple Turkey Chili

Ingredients

  • 1 1/2 teaspoons olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cups water
  • 1 (28 ounce) can canned crushed tomatoes
  • 1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
  • 1 tablespoon garlic, minced
  • 2 tablespoons chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

  • heat the oil in a large pot over medium heat. place turkey in the pot, and cook until evenly brown. stir in onion, and cook until tender.
  • pour water into the pot. mix in tomatoes, kidney beans, and garlic. season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. bring to a boil. reduce heat to low, cover, and simmer 30 minutes.

Benny's Famous Jalapeno Poppers

Ingredients

  • Servings: 8
  • 1 (4 ounce) package cream cheese, softened
  • 4 ounces shredded cheddar cheese
  • 6 ounces fresh corn kernals
  • salt and ground black pepper to taste
  • 8 fresh jalapeno peppers, halved lengthwise and seeded
  • 8 slices bacon, cut in half
  • 16 toothpicks

  • preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • mix together the cream cheese, cheddar cheese, corn, salt, and black pepper in a bowl.
  • fill the jalapeno halves with the cream cheese mixture.
  • wrap each stuffed pepper with bacon, securing it with a toothpick. be sure the toothpick pokes through the bacon as well as the pepper.
  • place the poppers face down on the grill over direct heat. grill until bacon is crispy and brown, about 5 minutes; turn the poppers over and grill until bacon is crisp on other side, 5 more minutes.

  • 4 apples - peeled, cored and chopped
  • 3/4 cup water
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon

  • in a saucepan, combine apples, water, sugar, and cinnamon. cover, and cook over medium heat for 15 to 20 minutes, or until apples are soft. allow to cool, then mash with a fork or potato masher.

Fresh Tomato Salsa

Ingredients

  • 3 tomatoes, chopped
  • 1/2 cup finely diced onion
  • 5 serrano chiles, finely chopped
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon salt
  • 2 teaspoons lime juice

  • in a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, and lime juice. chill for one hour in the refrigerator before serving.

Baked Buffalo Chicken Dip

Ingredients

  • 3 cups diced cooked rotisserie chicken
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup hot pepper sauce (such as frank's redhot®)
  • 1/2 cup shredded pepper jack cheese
  • 1/2 cup blue cheese dressing
  • 1/2 cup crumbled blue cheese
  • 1/2 teaspoon seafood seasoning (such as old bay®)
  • 1 pinch cayenne pepper, or to taste
  • 2 tablespoons shredded pepper jack cheese
  • 1 pinch cayenne pepper, for garnish

  • preheat oven to 400 degrees f (200 degrees c).
  • combine chicken, cream cheese, hot pepper sauce, 1/2 cup pepper jack cheese, blue cheese dressing, crumbled blue cheese, seafood seasoning, and cayenne pepper in a large bowl.
  • transfer chicken mixture to a 9-inch round baking dish and sprinkle with 2 tablespoons pepper jack cheese.
  • bake until lightly browned, 15 to 20 minutes. remove from oven and garnish with cayenne pepper.

  • 1 pound asparagus
  • 1 teaspoon cajun seasoning

  • preheat oven to 425 degrees f (220 degrees c).
  • snap the asparagus at the tender part of the stalk. arrange spears in one layer on a baking sheet. spray lightly with nonstick spray; sprinkle with the cajun seasoning.
